Sugar Cookies w/Dye-Free Sugar Crystals

Ingredients

  • 2 ½ cups GF flour (plus more for dusting)

  • 1 cups organic cane sugar

  • ¼ tsp corn-free baking powder

  • ¼ tsp kosher salt or sea salt

  • ¾ cup vegan butter (1 ½ sticks, room temperature)

  • 3 tbsp aquafaba

  • 2 tsp pure vanilla extract

Dye Free Sugar Crystals

  • 1 cup organic cane sugar

  • Dye free natural food coloring

Directions

  1. In a medium bowl, combine flour, baking powder,and salt. Whisk together until well mixed. Set aside.

  2. In a standing mixer bowl, cream butter and sugar on medium-high until smooth.

  3. Add aquafaba and vanilla to mixture and beat on medium until fluffy, about 2 minutes. When the mixer is stopped, use your rubber spatula to scrape down the sides of the bowl and the bottom of the bowl any batter that may not have blended well. Blend again for 1 minute.

  4. Slowly pour in dry ingredients while mixer continues to blend on medium, stopping to scrape bowl as needed.

  5. Once dough is well blended (should be a little oil but not wet or sticky), use your fingers to roll the dough into one big ball.

  6. Dust your surface with flour. Divide ball into 2 equal pieces. Roll out one ball of dough ¼ thick on the surface using your rolling pin. Transfer to parchment paper and set aside. Repeat process for the second ball of dough. Place a piece of transfer paper over 1st piece of dough and stack 2nd piece of dough on op. Cover and wap dough with plastic wrap Refrigerate for at least 1 hour or up to 2 days.

  7. Preheat oven to 350°F. Remove dough from fridge and place on dusted surface. Use cookie cutters to cut desired shapes. Cover cookie sheets with parchment paper and place cut out shapes on baking sheets about 1 inch apart. As you go, re-roll scraps together and roll back out onto floured surface until all dough has been used. If dough begins to get to sticky, it may be too warm, place in freezer for 15 mins then continue working with dough.

  8. Place the baking sheets in the oven and bake for 10-12 minutes or until golden brown around the edges. Remove from oven and place baking sheet on counter (be sure to cover counter with pot holder first) and allow to cool for 5 minutes. Then transfer to wire cooling rack.

Dye Free Sugar Crystals

Directions:

  1. In a small bowl, pour 1 cup or sugar. Set aside. 

  2. Put 2 drops of your food coloring choice in a teaspoon. 

  3. Add 1 drop of water to this mixture.

  4. Use a fork and begin stirring and sifting through the fork prongs. Use the fork to break up any lumps of food coloring you see. 

  5. Once the color is fully mixed, you’re done! You can now sprinkle on top your cookies.
